Rain­bow matcha latte

tsp matcha pow­der of your choice (we

used Mer­maid and Ap­ples & Pears)

100ml wa­ter

100ml milk of your choice (dairy or non-dairy)

tsp honey, to taste

METHOD

Add your cho­sen matcha pow­der into a small bowl. Pre­pare your

wa­ter – it needs to be 80°C (176°F). You can do this by heat­ing it gen­tly

in a saucepan, or by boil­ing it and adding a small amount of cold wa­ter.

Add a lit­tle of the wa­ter to your matcha pow­der and whisk well,

en­sur­ing that you re­move any clumps.

When smooth, add your matcha mix into your favourite cup, then add the

rest of the wa­ter, un­til the cup is half full. Add the honey as de­sired. Gen­tly

heat the milk, then care­fully froth un­til foamy. Add the milk to your matcha

mix, stir­ring as you go, and en­sur­ing you get a nice, big dol­lop of frothy milk

on the top. Sprin­kle a lit­tle matcha on top to serve.
