It sounds like something out of a sci-fi film, but liquid nitrogen ice cream isn’t from the future, it’s the present - and coming to Kent this weekend.

Ice cream and pudding pioneers Four Winters will be bringing the magic of liquid nitrogen ice cream to Bluewater shopping centre, when they open a new parlour on Saturday, April 7. Using liquid nitrogen to make ice cream means it’s much quicker and there’s less chance of ice crystals in the ice cream.

As part of the unveiling, Four Winters’ chefs have even whipped up a special Garden of England ice cream, inspired by the county’s countryside. It will include fresh, edible flowers, crushed lotus biscuits and a touch of black pepper, laid over a sweet cream base blended with floral blueberries.

But visitors will have to be quick to snap it up - the first 50 customers will receive a free serving of the special creation at the opening at noon. Four Winters’ ice cream is made to order using liquid nitrogen, flash freezing the liquid base in front of customers’ eyes - at -196C - and creating a super smooth, superior serve.

The new spring ice cream selection ooze with spring flavours and luscious ingredients, including Lavender Honey, Strawberry Cheesecake, Marshmallow Passion and Rose Lokum. At the parlour, customers will be able to indulge in madeto-order ice cream, as well as Molten Puddings, hot drinks and shakes.

The Four Winters’ Molten Puddings range is inspired by British dessert favourites such as fudge brownie and created by condensing, rather than freezing, the cream bases. The company was founded in 2014 with the aim of bringing fun and creativity back to ice cream.

Its aim is to “bring together culinary art and innovative technology to deliver an unbelievably creamy, colourful and rich ice cream.” The aim is to create something special with the wow factor, by making bespoke pudding in front of their customers’ eyes. The Bluewater parlour joins the company’s other futuristic bases in South Kensington, Soho and Notting Hill. You will be able to find Four Winters in the Winter Garden at Bluewater.
