Ham chow­der

Serves 4 600g ham joint, cooked and chopped 1 tbsp but­ter 1 tbsp veg­etable oil 2 onions, chopped 1 gar­lic clove, chopped 1 tbsp plain flour 700ml whole milk 800g Maris Piper pota­toes, peeled and chopped into bite-sized pieces black pep­per 300ml dou­ble cream 2 tbsp chopped curly pars­ley, plus extra for gar­nish Heat the but­ter and oil in a very large saucepan un­til the but­ter melts. Add the onion and gar­lic, then sauté for 10 mins, un­til soft. Mix the flour into the onions and con­tinue to stir for 1 min. Pour in the milk grad­u­ally, stir­ring, then add the pota­toes and 300ml of wa­ter, and bring to the boil. Sea­son with pep­per. Sim­mer for 25 mins, then add the ham and cook for an­other 5 mins. Stir in the cream and chopped pars­ley. Serve, gar­nished with pars­ley. 58
