More milk in may

May was known by the An­glo-Sax­ons as ‘the month of three milk­ings’. There was such an abun­dance of fresh spring grass for the cows to eat that they needed to be milked three times a day. May Day cel­e­bra­tions in­cluded a plen­i­tude of dairy-based foods, such as milky puddings, creamy desserts and even cheese­cakes.
