8 peaches, de-stoned and thinly sliced 200ml cold water 250g caster sugar fresh mint, to serve Place the peach slices in a large saucepan and cover with the cold water. Bring to the boil, stirring occasionally, then simmer for 3 mins until the peaches have softened. Stir in the sugar and simmer on a low heat until it dissolves. Pour into a freezable 1 litre container and seal with a lid. Allow to cool before freezing for 2 hrs, then blend with a handheld electric blender for 30 secs. Freeze again for 2 hrs, then repeat the process twice. Freeze overnight before serving in scoops, garnished with mint.
