Peach sor­bet

8 peaches, de-stoned and thinly sliced 200ml cold wa­ter 250g caster sugar fresh mint, to serve Place the peach slices in a large saucepan and cover with the cold wa­ter. Bring to the boil, stir­ring oc­ca­sion­ally, then sim­mer for 3 mins un­til the peaches have soft­ened. Stir in the sugar and sim­mer on a low heat un­til it dis­solves. Pour into a freez­able 1 litre con­tainer and seal with a lid. Al­low to cool be­fore freez­ing for 2 hrs, then blend with a hand­held elec­tric blender for 30 secs. Freeze again for 2 hrs, then re­peat the process twice. Freeze overnight be­fore serv­ing in scoops, gar­nished with mint.
