France’s vine­yards have rea­son to celebrate as both the ‘hill­sides, houses and wine cel­lars of Cham­pagne’ and the ‘cli­mate and ter­roirs of Bur­gundy’ have been named UNESCO World Her­itage Sites. For Cham­pagne, this in­cludes the cham­pagne houses in Reims and the world-fa­mous Av­enue de Cham­pagne in Éper­nay and some of the old­est vine­yards around the vil­lage of Hautvillers where, leg­end has it, the monk Dom Pérignon in­vented the fer­men­ta­tion process that makes cham­pagne fizz.
