Cheese is an­other im­por­tant el­e­ment of Au­vergne’s gas­tro­nomic de­lights. The re­gion has five AOC cheeses: Saint-Nec­taire, Bleu d’Au­vergne, Can­tal, Salers and Fourme d’Am­bert. Saint-Nec­taire ( pic­tured) is a creamy white cheese with a nutty taste and a dis­tinc­tive smell, which is owed to the ripen­ing process when the cheese is stored on a bed of straw.
