Stroll around the well-pre­served me­dieval town of Sar­lat-la-Canéda in Dor­dogne and you’ll be de­lighted by restau­rants and shops dis­play­ing or­na­men­tal sala­man­ders (an em­blem of the town), as well as ducks, geese and other birds. Foie gras is a prized del­i­cacy here in the heart of the Périg­ord Noir and Sar­lat pays homage to it ev­ery year dur­ing the Fest d’Oie fes­ti­val (4-5 March).
