Pop­u­lar French pas­try, the Paris-Brest was cre­ated in 1910 to com­mem­o­rate the fa­mous Paris-Brest bi­cy­cle race – the cir­cu­lar shape rep­re­sents a bi­cy­cle wheel. It is made from choux pas­try and filled with a pra­line-flavoured cream, une crème mous­se­line pral­inée. Its high calo­rie con­tent made it pop­u­lar with cy­clists in the race and is now a pop­u­lar pas­try which can be found in pâtis­series all across France.
