While Louise’s cour­ses look set to en­hance the culi­nary reper­toires of her guests, she and Ian are very much en­joy­ing the taste they’ve de­vel­oped for life in France. “I’m look­ing out of my win­dow and it’s so tran­quil and beau­ti­ful,” says Louise. “Our French isn’t good enough to have an in-depth con­ver­sa­tion but we can com­mu­ni­cate with our neigh­bours and ev­ery­body has been in­cred­i­bly help­ful and friendly. We’re very set­tled here and I don’t think ei­ther of us would move back to the UK out of choice. I think the only rea­son we’d move is to be some­where slightly less ru­ral, or per­haps closer to the coast. My favourite in­gre­di­ent is fish and I find the seafood in France par­tic­u­larly good. I bought some fresh scal­lops from the mar­ket this morn­ing and they’re so shiny, they look like they’re still in the sea.”

And with that she’s head­ing back into the kitchen to pre­pare for the next course, and I’m left feel­ing rather hun­gry and wish­ing I was there too.
