Fancy French Toast
●1 tbsp coconut oil ● 1 large egg ● 2 slices organic bread ●½ cup tigernut flour ● 1 tbsp coconut sugar or maple syrup (optional) 1 Heat a griddle on medium-high with coconut oil. whisk the egg in a bowl, and dip the bread into the bowl, making sure both sides are well coated. dust with tigernut flour, then drop on to the griddle. 2 Cook for a few minutes on each side until golden brown. 3 serve on plates and sprinkle with coconut sugar or drizzle with maple syrup as desired.
Bangin’ Bean Burgers
● 2 tbsp coconut oil ● 1 can organic beans ● ½ cup almond meal ● 1 small yellow onion ● ½ tsp cumin ● 1 flax egg ● ¼ tsp each of garlic powder, nutritional yeast, fennel, thyme, sage, salt and black pepper 1 Heat the oil in a large pan over a medium heat. 2 Mash the beans with the rest of the ingredients. season to taste and add more spices to your liking. 3 divide mixture into 4 equal parts, then shape into patties. Fry the patties until golden, about 4 minutes on each side. serve on bread rolls with kale and lettuce.
Tasty Thai Salad
FOR THE SALAD ● 1 tbsp coconut oil ● 1lb shrimp ● 4 cups mixed greens ● ½ cup fresh bean sprouts ● 1 slice of red onion ● 1 tbsp fresh mint ● 1 tbsp chopped cilantro ● 4 cherry tomatoes ● 4 tsp dry roasted peanuts ● 1 lime FOR THE DRESSING ● 2 tbsp rice vinegar ● 1 tbsp green onions ● 1 tbsp peanut butter ● 1 tsp ginger ● dash of cayenne pepper ● 1 tsp sesame oil
1Heat the oil in a pan on high and cook the shrimp for 6 minutes. 2 Put mixed greens, bean sprouts, red onion, mint, cilantro and tomatoes into 4 serving bowls. Mix all the dressing ingredients in a separate bowl and add the salad. 3 Top with the cooked shrimp and peanuts. squeeze lime juice over the entire salad.
