Fancy French Toast

●1 tbsp co­conut oil ● 1 large egg ● 2 slices or­ganic bread ●½ cup tiger­nut flour ● 1 tbsp co­conut sugar or maple syrup (op­tional) 1 Heat a grid­dle on medium-high with co­conut oil. whisk the egg in a bowl, and dip the bread into the bowl, mak­ing sure both sides are well coated. dust with tiger­nut flour, then drop on to the grid­dle. 2 Cook for a few min­utes on each side un­til golden brown. 3 serve on plates and sprin­kle with co­conut sugar or driz­zle with maple syrup as de­sired.

Ban­gin’ Bean Burg­ers

● 2 tbsp co­conut oil ● 1 can or­ganic beans ● ½ cup al­mond meal ● 1 small yel­low onion ● ½ tsp cumin ● 1 flax egg ● ¼ tsp each of gar­lic pow­der, nu­tri­tional yeast, fen­nel, thyme, sage, salt and black pep­per 1 Heat the oil in a large pan over a medium heat. 2 Mash the beans with the rest of the in­gre­di­ents. sea­son to taste and add more spices to your lik­ing. 3 di­vide mix­ture into 4 equal parts, then shape into pat­ties. Fry the pat­ties un­til golden, about 4 min­utes on each side. serve on bread rolls with kale and let­tuce.

Tasty Thai Salad

FOR THE SALAD ● 1 tbsp co­conut oil ● 1lb shrimp ● 4 cups mixed greens ● ½ cup fresh bean sprouts ● 1 slice of red onion ● 1 tbsp fresh mint ● 1 tbsp chopped cilantro ● 4 cherry toma­toes ● 4 tsp dry roasted peanuts ● 1 lime FOR THE DRESS­ING ● 2 tbsp rice vine­gar ● 1 tbsp green onions ● 1 tbsp peanut but­ter ● 1 tsp gin­ger ● dash of cayenne pep­per ● 1 tsp sesame oil

1Heat the oil in a pan on high and cook the shrimp for 6 min­utes. 2 Put mixed greens, bean sprouts, red onion, mint, cilantro and toma­toes into 4 serv­ing bowls. Mix all the dress­ing in­gre­di­ents in a sep­a­rate bowl and add the salad. 3 Top with the cooked shrimp and peanuts. squeeze lime juice over the en­tire salad.
