Impress your friends with crowd-pleasing aubergine dip and donate to UNICEF’S Syria Relief fund at the same time.
INGREDIENTS ● 1 aubergine ● 4tbsp greek yogurt ● 2tsp tahini ● 1 clove of garlic, crushed ● 1 squeeze of lemon ● olive oil to garnish ● Pine nuts to garnish ● Pomegranate seeds (optional) METHOD 1 Preheat the oven to 200°C/ 400°C/gas 6. 2 wrap the aubergine in aluminium foil and bake in the oven for about 30 minutes. (The alternative here is to slice up the aubergine and deep-fry it.) 3 Take the aubergine out of the oven, then peel it, mash it and mix it in with the crushed garlic. 4Add
the yogurt, tahini and lemon juice and mix well. 5 season to taste, then drizzle with olive oil and garnish with pine nuts. Mix in pomegranate seeds if desired. serve with warm flatbread.
