Char­i­ta­ble Feasts!


Im­press your friends with crowd-pleas­ing aubergine dip and do­nate to UNICEF’S Syria Re­lief fund at the same time.

IN­GRE­DI­ENTS ● 1 aubergine ● 4tbsp greek yo­gurt ● 2tsp tahini ● 1 clove of gar­lic, crushed ● 1 squeeze of lemon ● olive oil to gar­nish ● Pine nuts to gar­nish ● Pomegranate seeds (op­tional) METHOD 1 Pre­heat the oven to 200°C/ 400°C/gas 6. 2 wrap the aubergine in alu­minium foil and bake in the oven for about 30 minutes. (The al­ter­na­tive here is to slice up the aubergine and deep-fry it.) 3 Take the aubergine out of the oven, then peel it, mash it and mix it in with the crushed gar­lic. 4Add

the yo­gurt, tahini and lemon juice and mix well. 5 sea­son to taste, then driz­zle with olive oil and gar­nish with pine nuts. Mix in pomegranate seeds if de­sired. serve with warm flat­bread.
