Your plans dic­tate how you take it apart. 2 Don’t wait – take it apart right af­ter Din­ner deal­ing with it straight away means it’ll take up less space in the fridge. put the meat into two sep­a­rate piles: white meat for sand­wiches and dark meat for cook­ing other dishes. 3 take Stock put the bones and any left­over veg in a pan, cover with an inch of cold wa­ter and bring to a gen­tle sim­mer. Leave for three hours, then strain into an air­tight con­tainer. It will keep for 2-3 days in the fridge or up to three months in the freezer.
