Creamy Salmon & Dill Fet­tucine

IN­GRE­DI­ENTS ½ red onion, diced ½ cup of dill, finely chopped 2 hot smoked salmon fil­lets lemon, rind and juice 1 clove of gar­lic 2 tbsp low fat crème fraiche


1 Cook the pasta ac­cord­ing to the packet in­struc­tions – 2 min­utes will get you pasta that’s al dente.

2 In a hot pan, brown the onion and gar­lic un­til soft­ened, then flake the salmon and cook un­til warmed through.

3 Add the grated rind and juice of one lemon to the pan, then stir through the dill, onion and gar­lic be­fore adding the salmon.

4 Stir in the crème fraiche and al­low to heat gently for a few min­utes. Toss the pasta into the mix and gar­nish with parme­san cheese.
