Creamy Salmon & Dill Fettucine

INGREDIENTS ½ red onion, diced ½ cup of dill, finely chopped 2 hot smoked salmon fillets lemon, rind and juice 1 clove of garlic 2 tbsp low fat crème fraiche
1 Cook the pasta according to the packet instructions – 2 minutes will get you pasta that’s al dente.
2 In a hot pan, brown the onion and garlic until softened, then flake the salmon and cook until warmed through.
3 Add the grated rind and juice of one lemon to the pan, then stir through the dill, onion and garlic before adding the salmon.
4 Stir in the crème fraiche and allow to heat gently for a few minutes. Toss the pasta into the mix and garnish with parmesan cheese.
