com­bin­ing finely sliced red cab­bage and fen­nel with but­ter let­tuce leaves and av­o­cado makes the base of this salad. top with pan-fried or oven-baked crispy ham pieces and orange seg­ments. the best dress­ing for this salad is red wine vine­gar and olive oil, but if you don’t have that, the juice from the orange with a splash of olive oil will do the job.

TOP TIP: This works just as well with­out the ham and the orange can be sub­sti­tuted for pomegranate ker­nels.
