Free ham?! i’ll go for my twist on a car­bonara; ham, mush­rooms, gar­lic, onion and tar­ragon, sautéed with two ta­ble­spoons of crème fraîche stirred through be­fore tossing in glo­ri­ously al dente penne. this makes enough for four serv­ings, and all for un­der a fiver.

TOP TIP: For added depth of flavour I add a splash of white wine while sautéing the gar­lic and onions.
