Serves six ONE of the sim­plest desserts ever to make, serve them with some sea­sonal fruits and it’s the per­fect fin­ish to a light lunch. ●● 1 pun­net black­cur­rants ●● Pinch fresh root gin­ger – chopped ●● 1 vanilla pod ●● 1L whip­ping cream ●● 265g caster sugar ●● 3 leaves of gelatin – soaked in some cold wa­ter To serve ●● A se­lec­tion of sea­sonal fruits ●● Sprigs of mint ●● Meringue shards 2) Split the vanilla pod in half and place in a saucepan along with the cream and sugar. Bring to a sim­mer and then re­move from the heat. 5) Un­mould onto in­di­vid­ual plates and fin­ish with the sea­sonal fruits, meringue shards and a swirl of crème anglaise if de­sired.
