Brewing up Defiance
BOLLINGTON Brewery has launched a new ale that was unveiled in cask format at the Manchester Beer and Cider Festival this week.
Developed by head brewer, Simon Whatmuff, Defiance is a black IPA with a distinctive toasty, dark malt character.
It is described as ‘a slick jet black IPA, bursting with tropical flavours and aromas’.
The name is derived from the original mill site in Bollington where the first brewery was built in the late 1800s, so has lots of local resonance.
A complex mix of dark malts and West Coast American hops, Defiance is now available on keg in The Park Tavern in Macclesfield as well as The Vale Inn in Bollington and The Cask Tavern in Poynton, which are all part of The Bollington Brewing Co’s estate.
The ale is the latest addition to the brewery’s awardwinning range of beers, which have earned industry recognition over the course of the last eight years.
