Brew­ing up De­fi­ance

BOLLING­TON Brew­ery has launched a new ale that was un­veiled in cask for­mat at the Manch­ester Beer and Cider Fes­ti­val this week.

De­vel­oped by head brewer, Si­mon What­muff, De­fi­ance is a black IPA with a dis­tinc­tive toasty, dark malt char­ac­ter.

It is de­scribed as ‘a slick jet black IPA, burst­ing with trop­i­cal flavours and aro­mas’.

The name is de­rived from the orig­i­nal mill site in Bolling­ton where the first brew­ery was built in the late 1800s, so has lots of lo­cal res­o­nance.

A com­plex mix of dark malts and West Coast Amer­i­can hops, De­fi­ance is now avail­able on keg in The Park Tav­ern in Mac­cles­field as well as The Vale Inn in Bolling­ton and The Cask Tav­ern in Poyn­ton, which are all part of The Bolling­ton Brew­ing Co’s es­tate.

The ale is the lat­est ad­di­tion to the brew­ery’s award­win­ning range of beers, which have earned in­dus­try recog­ni­tion over the course of the last eight years.

Lee Wain­wright, owner of The Bolling­ton Brew­ing Co, said: “We’re ex­cited to in­tro­duce De­fi­ance to our cus­tomers.

“It’s a com­plex, aro­matic brew that has real stand­out and com­ple­ments our ex­ist­ing range.”
