Food for thought as cook plans cafe for waste grub

ASOCIALLYMINDED cook is ap­peal­ing for help to set up a cafe which res­cues waste food and turns it into de­li­cious meals.

Yvonne Phillips be­lieves Mac­cles­field could sus­tain a suc­cess­ful so­cial en­ter­prise us­ing goods that would oth­er­wise have been thrown away by su­per­mar­kets, in­de­pen­dent gro­cers and food banks.

She has now set up a Face­book group - Waste Food Cafe - to find like­minded peo­ple who could help get the pro­ject off the ground. Yvonne, who works as a cook, said: “I am re­ally pas­sion­ate about food and the thought that it could be wasted, and in such large quan­ti­ties, I find re­ally up­set­ting and un­sus­tain­able in the long run.”

Yvonne, who lives on the Capesthorne es­tate, has been get­ting some guid­ance from The Real Junk Food Pro­ject, a char­ity with sev­eral cafes un­der its name serv­ing food that would nor­mally be wasted.

She said: “The first stage is to set up this Face­book page to de­ter­mine if there are other like-minded peo­ple out there in the Mac­cles­field area who, like me, hate the idea of food be­ing thrown away.

“I like the idea to set up a cafe to use that food for good. I want to start a dis- cus­sion to see how it can be achieved.

“I am in­ter­ested in a new cafe soon to open in Manch­ester, which plans a pay-as-you-feel model.

“I don’t know if that is sus­tain­able, time will tell, but it is some­thing worth look­ing at.”

Yvonne, 58, lives with her hus­band Peter and has two chil­dren and one grand­child.

She has worked in cater­ing for many years.

Yvonne said: “I am a pas­sion­ate cook and I am very so­cially minded. A cafe run us­ing un­wanted food would com­bine those pas­sions.

“I re­alise it is a big pro­ject so I just want to take it slowly, step by step, get- ting plenty of help along the way. I have seen some mind-bog­gling sta­tis­tics that ap­prox­i­mately half of food is wasted by house­holds and more food is thrown away than pack­ag­ing.

“Th­ese sta­tis­tics seem ob­scene to me.

“It’s not just about the waste in­curred but the en­ergy and re­sources needed to pro­duce the food.

“So much is need­lessly thrown away be­cause peo­ple don’t un­der­stand what ‘best be­fore’ and ‘use by’ mean on their food prod­ucts.”
