Food for thought as cook plans cafe for waste grub
ASOCIALLYMINDED cook is appealing for help to set up a cafe which rescues waste food and turns it into delicious meals.
Yvonne Phillips believes Macclesfield could sustain a successful social enterprise using goods that would otherwise have been thrown away by supermarkets, independent grocers and food banks.
She has now set up a Facebook group - Waste Food Cafe - to find likeminded people who could help get the project off the ground. Yvonne, who works as a cook, said: “I am really passionate about food and the thought that it could be wasted, and in such large quantities, I find really upsetting and unsustainable in the long run.”
Yvonne, who lives on the Capesthorne estate, has been getting some guidance from The Real Junk Food Project, a charity with several cafes under its name serving food that would normally be wasted.
She said: “The first stage is to set up this Facebook page to determine if there are other like-minded people out there in the Macclesfield area who, like me, hate the idea of food being thrown away.
“I like the idea to set up a cafe to use that food for good. I want to start a dis- cussion to see how it can be achieved.
“I am interested in a new cafe soon to open in Manchester, which plans a pay-as-you-feel model.
“I don’t know if that is sustainable, time will tell, but it is something worth looking at.”
Yvonne, 58, lives with her husband Peter and has two children and one grandchild.
She has worked in catering for many years.
Yvonne said: “I am a passionate cook and I am very socially minded. A cafe run using unwanted food would combine those passions.
“I realise it is a big project so I just want to take it slowly, step by step, get- ting plenty of help along the way. I have seen some mind-boggling statistics that approximately half of food is wasted by households and more food is thrown away than packaging.
“These statistics seem obscene to me.
“It’s not just about the waste incurred but the energy and resources needed to produce the food.
“So much is needlessly thrown away because people don’t understand what ‘best before’ and ‘use by’ mean on their food products.”
