SUCH a clas­sic dish; the com­bi­na­tion of apple flavours with gar­lic and pars­ley is one of my favourites. Dry sweet cider can be used de­pend­ing on your pref­er­ence. Serves 2 In­gre­di­ents

Two ta­ble­spoons olive oil

One small onion finely-chopped

One clove gar­lic finely-chopped

Half Golden De­li­cious apple corked and finely-diced 1,200g mussels 250ml cider To fin­ish

Two Spring Onions finely-chopped

One ta­ble­spoon
