(Roast Apricots with Almond Crumble) APRICOTS are so in season right now. Just watch when you come to use as they can be a touch sour; that being the case just add a fraction more sugar.
In this recipe I’ve roasted them and topped them with an almond crumble. It’s a marriage made in heaven! Ingredients: 20 apricots Zest and juice of one lemon
One tablespoon caster sugar
