Whisk the flour, salt, sugar, bi­carb of soda, bak­ing pow­der, milk and eggs to­gether to make a bat­ter and pour it through a fine sieve. Heat a lit­tle oil in a non-stick fry­ing pan over a medium heat. Spoon the bat­ter into the cen­tre of the pan till it’s ap­prox­i­mately 1cm high and 5cm wide. Cook the pan­cake un­til golden brown on one side,

then flip it. Once it’s golden brown on both sides, re­move from the pan and place it on a plate. Re­peat the process to make three more pancakes. While the pancakes are cooking, place the ba­con rash­ers un­der a hot grill. Cook un­til golden on both sides. Place the ba­con on the pancakes and driz­zle the maple syrup over the top.
