Whisk the flour, salt, sugar, bicarb of soda, baking powder, milk and eggs together to make a batter and pour it through a fine sieve. Heat a little oil in a non-stick frying pan over a medium heat. Spoon the batter into the centre of the pan till it’s approximately 1cm high and 5cm wide. Cook the pancake until golden brown on one side,
then flip it. Once it’s golden brown on both sides, remove from the pan and place it on a plate. Repeat the process to make three more pancakes. While the pancakes are cooking, place the bacon rashers under a hot grill. Cook until golden on both sides. Place the bacon on the pancakes and drizzle the maple syrup over the top.
