MACKEREL AND BEETROOT SALAD
INGREDIENTS (SERVES 1)
2 smoked mackerel fillets / 1 beetroot, ready cooked / a handful of coriander leaves / a handful of watercress leaves / 1tsp lemon juice / 1tbsp olive oil
Cut the beetroot into wedges and arrange on a plate with the mackerel. Garnish with the coriander and watercress, then dress with lemon juice and olive oil.
