2 smoked mack­erel fil­lets / 1 beet­root, ready cooked / a hand­ful of co­rian­der leaves / a hand­ful of wa­ter­cress leaves / 1tsp lemon juice / 1tbsp olive oil

TO MAKE

Cut the beet­root into wedges and ar­range on a plate with the mack­erel. Gar­nish with the co­rian­der and wa­ter­cress, then dress with lemon juice and olive oil.
