1 chicken breast, cut into pieces / 30g whole­wheat noodles / Hand­ful of broc­coli flo­rets / Hand­ful of sliced car­rots / 1 red onion, thinly sliced / 1tsp gar­lic paste / 1tsp crushed wal­nuts or peanuts / Dash of rice vine­gar / Dash of low-sodium soy sauce / 1tbsp chilli sauce / 1tbsp honey / Dash of lime or lemon juice / 1tbsp olive oil


Cook the noodles ac­cord­ing to pack­ag­ing in­struc­tions, then drain and set them aside. In a bowl, mix the soy sauce, rice vine­gar, chilli sauce, honey and lemon juice. Heat the olive oil in a fry­ing pan over a medium heat. Add the onion and gar­lic paste and sauté un­til the onions turn slightly brown. Add the chicken, broc­coli and car­rots and cook. When the chicken is nearly fin­ished, add the noodles and pour the sauce over the mix­ture. Stir the mix­ture con­tin­u­ously with a spat­ula, gar­nish­ing with crushed wal­nuts or peanuts if de­sired.
