Most peo­ple throw away too much of their spring onions, but prep couldn’t be sim­pler. Rinse them un­der cold wa­ter, then chop just above the stringy roots to re­move them. Take about 2cm off the top, then “roll” your knife - keep­ing the tip on the sur­face of your cut­ting board to cut the rest as you feed them through with your other hand.
