INGREDIENT­S SERVES 10 NEW POTATOES, 2KG LOVAGE, SMALL BUNCH NORI SHEETS, 8 CIDER VINEGAR, 30ML WASABI PASTE, 2TBSP OLIVE OIL, 80ML RED ONIONS, 3 PETIS POIS, 500G

METHOD

1/ Clean the potatoes then place on a sheet of baking paper and aluminium foil with some torn lovage. Wrap into parcels and place in the oven at 200°C for 30 minutes. 2/ Heat a dry frying pan and toast the nori until crisp. Store to one side. Whisk the cider vinegar, melanoma-fighting wasabi and oil, then season. 3/ Place the potatoes in a large mixing bowl. Add the sliced onions, peas and dressing. Break up the nori and place on top. Serve your spuds cold to increase levels of resistant starch, which Flinders Uni found reduces cancer cell formation in your gut. With thanks to Grain Store
