DARK CHOCOLATE & PEANUT BUTTER BANANA BREAD MAKES 6 PORTIONS
• Jumbo oats, 150g • Baking powder, 1tsp • Pinch of salt • Dark chocolate cocoa powder, 3tbsp • Dark choc chips, 40g • Bananas, 3, ripe • An egg, beaten • Water, 150ml • Crunchy peanut butter, 2 tbsp • Raspberries, handful METHOD Step 1 The warm weather needn’t portend a dry spell for your carb habit. This upgraded banana bread is rich in antioxidants to keep you feeling fit and recovering quickly. Heat the oven to 170°C and line a loaf pan with paper. In a bowl, mix the oats, baking powder, salt, cocoa powder and chocolate chips. Step 2 In a separate bowl mash the bananas – rich in stamina-boosting vit B6 – with beaten egg and water. Add this mix to your larger bowl and stir well until you form a thick porridge-like consistency for the batter. Step 3 Pour the batter into the loaf pan and bake it for 35- 40 minutes. Let it cool, then top with peanut butter and a handful of raspberries for extra sweetness. The loaf freezes well, so save half for later in the week. If you can summon the willpower.
