DARK CHOCO­LATE & PEANUT BUT­TER BA­NANA BREAD MAKES 6 POR­TIONS

• Jumbo oats, 150g • Bak­ing pow­der, 1tsp • Pinch of salt • Dark choco­late co­coa pow­der, 3tbsp • Dark choc chips, 40g • Ba­nanas, 3, ripe • An egg, beaten • Wa­ter, 150ml • Crunchy peanut but­ter, 2 tbsp • Rasp­ber­ries, hand­ful METHOD Step 1 The warm weather needn’t por­tend a dry spell for your carb habit. This up­graded ba­nana bread is rich in an­tiox­i­dants to keep you feel­ing fit and re­cov­er­ing quickly. Heat the oven to 170°C and line a loaf pan with paper. In a bowl, mix the oats, bak­ing pow­der, salt, co­coa pow­der and choco­late chips. Step 2 In a sep­a­rate bowl mash the ba­nanas – rich in stamina-boost­ing vit B6 – with beaten egg and wa­ter. Add this mix to your larger bowl and stir well un­til you form a thick por­ridge-like con­sis­tency for the bat­ter. Step 3 Pour the bat­ter into the loaf pan and bake it for 35- 40 min­utes. Let it cool, then top with peanut but­ter and a hand­ful of rasp­ber­ries for ex­tra sweet­ness. The loaf freezes well, so save half for later in the week. If you can sum­mon the willpower.
