BEER- SOAKED CRAY­FISH & DILL

SERVES 4 • Wheat beer, 2 pints • Wa­ter, 500ml • Fen­nel seeds, 1tbsp • Black pep­per­corns, 1tbsp • Sea salt to taste • Live cray­fish, 2kg • Dill, hand­ful, chopped METHOD Pour the beer and wa­ter into a pan, add the fen­nel seeds (for a top-up of cal­cium), pep­per­corns and salt, and bring to the boil. Let it sim­mer for 10 min­utes, then add the cray­fish for a fur­ther three. Now chuck in the dill, which stud­ies show has anti-can­cer prop­er­ties, and sim­mer for two min­utes more. Drain and serve im­me­di­ately with a light salad and a glass of the wheat beer.
