METHOD

1/ Stick a pan on high heat with a splash of oil. Trim the fat from your pro­tein-rich steak and sea­son well. Sear it for 20 sec­onds on each side, then let it cook un­til pink. 2/ Slice the mush­room – it’s rich in potas­sium to sup­port mus­cle func­tion – and fry in the meat juice for about three min­utes. Add grated stil­ton, then take it off the heat. 3/ Halve your brioche sub roll and toast un­til golden. Add a layer of truf­fle mayo and top with fresh rocket. Slice the steak and ar­range on top be­fore adding the mush­room mix, pro­volone, chutney and pick­led chilli. With thanks to Sub Cult
