TOMATO • CO­RIAN­DER LEAVES • LIME, ½, JUICED • AN AV­O­CADO • SOUR­DOUGH, 3 SLICES • SPINACH, HAND­FUL • CHICKEN BREAST, 180G • CHIPO­TLE PASTE, 2TSP •

METHOD

1/ Start by mak­ing the salsa: finely slice the tomato and mix with torn co­rian­der leaves and a squeeze of lime. The vi­ta­min C in toma­toes and cit­rus has been shown to in­hibit the pro­duc­tion of cor­ti­sol, help­ing to com­bat end-of-week adrenal fa­tigue. 2/ Slice, de-pit and crush the av­o­cado, which is packed full of es­sen­tial fatty acids to calm the ef­fects of men­tal and phys­i­cal stress. Spread half of it on a slice of bread. 3/ Tear up your mag­ne­sium­rich spinach leaves and layer them over the avo slice with salsa, chipo­tle and

chicken. Avo-up the next slice of bread and re­peat. Pop the last slice on top and dig in
