SERVES 2 Colch­ester oys­ters, 12 Ca­pers, 3tsp Fer­mented wild gar­lic, 2tsp Co­rian­der seeds, ½tsp METHOD Roughly chop the ca­pers and finely mince the fer­mented wild gar­lic, then com­bine the two in a bowl. Crush the co­rian­der seeds with a pes­tle and mor­tar and add to the mix­ture, as well as a splash of the brine from the ca­pers. Dis­trib­ute a tea­spoon of the dress­ing onto each oys­ter and de­vour.
