1/ Whether you’ve been train­ing hard or work­ing tire­lessly, con­sider this your re­cov­ery pack­age, full of slow-burn­ing carbs. To make the bhaji, whisk sparkling wa­ter into the flour, spices and salt, then add the onion and car­rot for a hit of an­tiox­i­dants and blood su­gar-bal­anc­ing bi­otin. Heat a pan of oil to 180°C, roll the mix into balls and deep-fry. 2/ To pickle your onions, sim­ply slice and soak in lime juice and salt un­til they turn bright pink. The pleas­ing aes­thet­ics aside, the ex­tra vi­ta­min C will work to re­duce your cor­ti­sol lev­els. 3/ To as­sem­ble, spread the yo­gurt and chut­ney on the bread and top with the onions and herbs, be­fore stuff­ing in a few bha­jis. Add a sprin­kle of Bom­bay mix for ex­tra crunch – and de­vour.
