Meringue Christmas Trees
Ingredients (Makes 12-16) ❋ 4 large egg whites ❋ Few drops vanilla extract ❋ 1 pinch salt ❋ 250g caster sugar 1 Heat the oven to its lowest setting. Line 2 large baking trays with non-stick baking paper. 2 Whisk the egg whites, vanilla and salt with an electric whisk until beginning to form peaks. Gradually whisk in the caster sugar until stiff, but not dry. 3 Put the meringue into a piping bag and pipe Christmas tree shapes on the baking trays. 4 Bake for about 2 hours, until the meringues sound crisp when tapped underneath. Turn the oven off and leave to cool in the oven for a further 1 hour. Carefully peel away the paper and leave to cool completely.
