Plum Cheesecake Rice Cakes
Ingredients (Makes 2)
3 plums, pitted and sliced 2 tsp honey
1 orange, fine shreds of zest and juice
80g low fat soft cheese
2tbsp 0% fat Greek yoghurt 2tsp caster sugar
¼ tsp vanilla extract
2 rice cakes
Cinnamon or nutmeg, to serve
Put the plums, honey, orange zest and orange juice into a small saucepan with a little water and simmer for 4-5min, until tender. Cool.
Mix together the soft cheese, yoghur t, sugar and vanilla extract and spread thickly over the rice cakes.
Ser ve with the cooled plums and sprinkle with a little ground cinnamon or grated nutmeg.
