Tomato, Avocado, Red Pepper And Onion With Golden Halloumi
Serves 2 Finely slice ½ red onion and sprinkle with a little cider vinegar. Slice a ripe avocado, quarter 4 cherry tomatoes and slice ½ red pepper (bottled or fresh). Warm 2 flatbreads or tortillas in a chargrill pan or under the grill, and top with the onion, avocado and tomatoes. Add a couple of slices of halloumi cheese, dry-fried until golden, then finish off with spoonfuls of pesto and basil leaves.
