Sweet potato, Cau­li­flower & Spinach Bowl

• Small sweet potato • A few cau­li­flower flo­rets • A hand­ful of spinach • 1 cup of but­ter beans • Feta cheese • 2 tea­spoons co­conut flakes Cut a small amount of feta cheese into cubes, around 5 or 6. Cut and lightly steam the sweet potato and cau­li­flower for about 5 min­utes. Place the spinach in a bowl and top with the but­ter beans. Add the cooked cau­li­flower and sweet potato and a driz­zle of olive oil, then the feta cubes. Sea­son with salt and pep­per and the co­conut flakes then serve.
