Sim­ple shal­lot sa­tay sauce

This su­per sim­ple shal­lot sa­tay sauce is the per­fect go-to dip for chicken skew­ers, veg­etable tem­pura or as a dress­ing for noo­dles.

IN­GRE­DI­ENTS

• 2 tsp se­same oil

• 3 shal­lots, roughly chopped

• 1tbsp curry paste

• 3tbsp smooth peanut but­ter

• 160g co­conut cream

• juice of a lime

METHOD

Heat the oil in a small pan and gently cook the shal­lots for 3-5 min­utes un­til they start to soften. Stir in the curry paste then add the rest of the in­gre­di­ents. Bring to a sim­mer and cook for 5-8 min­utes un­til the sauce has thick­ened then whizz with a hand blender un­til smooth. Use as a dip for chicken skew­ers, veg­etable tem­pura or as a dress­ing for noo­dles

NOTE

We use tikka masala paste, but any ready-made curry paste would work just as well.
