Green harissa lobster

Whenever I visit a coastal town in Morocco, the first thing I do is head straight to the fish market to see what the fishermen have caught that day. You can buy fabulous seafood to cook at home, or take it to a restaurant and have them do it for you. And whenever I see lobster, I can’t resist. I cook mine on the barbecue with green harissa butter. Green harissa is a spicy North African sauce made with green chillies and plenty of fresh herbs, and mixed with a little butter – it melts over the charred lobsters beautifully.
