When­ever I visit a coastal town in Morocco, the first thing I do is head straight to the fish mar­ket to see what the fish­er­men have caught that day. You can buy fab­u­lous seafood to cook at home, or take it to a restau­rant and have them do it for you. And when­ever I see lob­ster, I can’t re­sist. I cook mine on the bar­be­cue with green harissa but­ter. Green harissa is a spicy North African sauce made with green chill­ies and plenty of fresh herbs, and mixed with a lit­tle but­ter – it melts over the charred lob­sters beau­ti­fully.
