Ko­rean fries with Gem® avo­cado



frozen french fries 200g un­salted but­ter 1 tbsp plain flour 1 tbsp whole milk 150ml cayenne pep­per º tsp ma­ture ched­dar 70g, grated Gem® avo­cado 1 lime 1, juiced sesame seeds 3 tbsp, toasted crispy onions 5 tbsp pick­led chopped jalapeños a hand­ful, drained sriracha a driz­zle

• Cook the fries ac­cord­ing to pack in­struc­tions. Mean­while, melt the but­ter in a small pan, add the flour and stir to make a smooth paste. Grad­u­ally add the milk, stir­ring well as you go. Once com­bined, add the cayenne pep­per and cheese, and sea­son to taste. Once the cheese has melted, set aside – you might need to loosen with a lit­tle milk as it sits.

• Cut the Gem® avo­cado flesh into 8 wedges and squeeze over the lime juice. Put the sesame seeds and crispy onions in a bowl and roll the avo­cado wedges through to coat. Set aside un­til ready to serve.

• Scat­ter the fries onto a serv­ing plate, pour the cheese sauce over the fries, place the Gem® avo­cado wedges on top, sprin­kle over the jalapeños and any re­main­ing crispy onion mix, and fi­nally driz­zle over sriracha to taste.
