Korean fries with Gem® avocado

frozen french fries 200g unsalted butter 1 tbsp plain flour 1 tbsp whole milk 150ml cayenne pepper º tsp mature cheddar 70g, grated Gem® avocado 1 lime 1, juiced sesame seeds 3 tbsp, toasted crispy onions 5 tbsp pickled chopped jalapeños a handful, drained sriracha a drizzle
• Cook the fries according to pack instructions. Meanwhile, melt the butter in a small pan, add the flour and stir to make a smooth paste. Gradually add the milk, stirring well as you go. Once combined, add the cayenne pepper and cheese, and season to taste. Once the cheese has melted, set aside – you might need to loosen with a little milk as it sits.
• Cut the Gem® avocado flesh into 8 wedges and squeeze over the lime juice. Put the sesame seeds and crispy onions in a bowl and roll the avocado wedges through to coat. Set aside until ready to serve.
• Scatter the fries onto a serving plate, pour the cheese sauce over the fries, place the Gem® avocado wedges on top, sprinkle over the jalapeños and any remaining crispy onion mix, and finally drizzle over sriracha to taste.
