Apricot jam, goat’s cheese and thyme toasties

white farmhouse loaf or bloomer 4 slices apricot jam 4 tbsp soft goat’s cheese 4 tbsp thyme a sprig, leaves picked butter softened for spreading • Make 2 sandwiches with the jam and cheese, sprinkling the fillings with the thyme leaves. Butter the outsides of the bread slices then fry in a non-stick pan until golden and crisp.
