Pick Me Up! - - QUICK & EASY RECIPE -

300g pota­toes, peeled 1 large cour­gette

1 large onion

1 red chilli, finely chopped 1 medium egg

1tsp fresh thyme, chopped 2tbsp olive oil

Salt and pep­per

1 Grate the potato, cour­gette and onion into a clean tea towel and squeeze all the ex­cess

wa­ter out of the veg­eta­bles. 2 place the veg­eta­bles in a large mix­ing bowl and com­bine well with the egg, chilli and thyme. sea­son with salt and pep­per. 3 place a fry­ing pan over a medium heat and add half the oil. When the pan’s hot tip in the potato mix­ture, gently press­ing to smooth over the top. leave for 7-8 min, un­til golden and crisp. now tip the potato on to a plate, crispy side on top and re­turn pan to the heat. heat the last of the oil and slide the potato back into the pan to crisp the un­der­side. serve hot.
