Weekends often give us a little more time to get creative in the kitchen, so try something new this Saturday!
BREAKFAST Bubble and squeak grill: Boil 2-3 peeled and chopped floury potatoes for 12-15 mins, adding some finely shredded green cabbage for the final 3-4 mins. Drain, mash and then leave to cool. Mix in an egg and some sliced spring onions. Shape into a patty, then cover and chill. Spray a frying pan with low-calorie cooking spray and place over a high heat. Fry patty for 2-3 mins on each side or until golden. Serve with grilled lean bacon rashers (all visible fat removed) and a poached egg.
LUNCH Crayfish salad: Pick up a Crayfish & Mango Salad with a Coconut, Lime & Chilli Dressing from Aldi and serve with 4 Ryvita Original Crispbreads spread with 75g Philadelphia Light Soft Cheese (from your allowance). Follow with some fresh fruit topped with fat-free natural yoghurt.
