1 cooked beet­root, peeled and quar­tered 100g frozen blue­ber­ries 1 small frozen ba­nana 240ml unsweet­ened al­mond milk or other milk of choice 240ml co­conut wa­ter 2.5cm knob fresh ginger, peeled 1 tbsp al­mond but­ter

Makes 2 serv­ings

Place the beet­root, blue­ber­ries, ba­nana, milk, co­conut wa­ter, ginger and al­mond but­ter in a blender.

Blend on high speed for sev­eral min­utes un­til smooth.
