PECAN PIE EN­ERGY BALLS

Home­made en­ergy balls are eas­ier to whizz up than you think. This recipe makes 10-12 and they keep in the fridge for up to five days. Wrap a cou­ple up and pop them in your belt for long runs. They're easy to di­gest on the go and tastier than gels. 80g dried apri­cots 100g toasted pecans 4 tbsp gluten free oats ½ tsp cin­na­mon ¼ tsp gin­ger (ground) ¼ tsp cloves ¼ tsp nut­meg 4 dates

FOR COAT­ING:

1 tbsp chia seeds 1 tbsp flax seeds

1/ Toast the pecans, then add to a food pro­ces­sor. Pulse for a few sec­onds, then add all the dry in­gre­di­ents.

2/ Mix un­til com­bined and add the dried apri­cots and dates. Pulse to­gether un­til you get a sticky dough.

3/ On a plate, mix the chia and flax seeds to­gether. Roll into 10 balls, then roll the balls in the seed mix­ture and re­frig­er­ate.
