AS­PARA­GUS AND CRAB NOO­DLES

Crab meat is a great source of omega-3 fatty acids. Makes 6 serv­ings

PRE­PARE 1 packet glass noo­dles ac­cord­ing to in­struc­tions; drain and leave aside. In a large pan, heat 3 tbsp olive oil and gen­tly cook 3 cloves minced gar­lic and 1 tbsp minced gin­ger. ADD 1 bunch as­para­gus, trimmed and cut into 2.5-cm pieces, and cook un­til ten­der but still bright green (2-4 mins). Re­duce heat to low, add 450g crab meat, drained, 60ml low-salt chicken stock and 11/2 tsp oys­ter sauce. Stir and cook un­til crab is warmed through (at least 2 mins).

ADD noo­dles, fold­ing gen­tly to com­bine. ADD 1/2 tsp salt and 1/4 tsp pep­per, sea­son­ing to taste. Serve in shal­low bowls, with 3 le­mon wedges. Gar­nish with chopped co­rian­der.
