ASPARAGUS AND CRAB NOODLES
Crab meat is a great source of omega-3 fatty acids. Makes 6 servings
PREPARE 1 packet glass noodles according to instructions; drain and leave aside. In a large pan, heat 3 tbsp olive oil and gently cook 3 cloves minced garlic and 1 tbsp minced ginger. ADD 1 bunch asparagus, trimmed and cut into 2.5-cm pieces, and cook until tender but still bright green (2-4 mins). Reduce heat to low, add 450g crab meat, drained, 60ml low-salt chicken stock and 11/2 tsp oyster sauce. Stir and cook until crab is warmed through (at least 2 mins).
ADD noodles, folding gently to combine. ADD 1/2 tsp salt and 1/4 tsp pepper, seasoning to taste. Serve in shallow bowls, with 3 lemon wedges. Garnish with chopped coriander.
