Delicious and healthy Weight Watchers meals
Rutherglen Weight Watchers leader, Fiona Pediani, is sharing some of her favourite recipes for delicious, yet healthy meals in the Reformer over the next few weeks.
This week, it’s Bread and butter pudding.
Serves four, six SmartPoints values per serving.
Grease a 1.2 litre (two pint) baking dish with a tiny knob of the low fat spread.
Spread 25g low fat spread between four slices of white calorie controlled bread, cut each slice into four triangles. Arrange them in the dish with 25g chocolate chips.
Finely grate the zest from one orange into two eggs, 450ml skimmed milk and one tsp vanilla extract, beat together.
Stir in 20g caster sugar, allowing a few minutes for it to dissolve.
Pour the mixture over the bread, then cover and leave to soak for at least 20 minutes.
Preheat the oven to Gas Mark 4/180°C/fan oven 160°C.
Peel the orange, then cut into segments.
Uncover the pudding and tuck in the orange segments.
Bake for about 30–35 minutes, until set and golden brown. Serve warm.
