De­li­cious and healthy Weight Watch­ers meals

Ruther­glen Weight Watch­ers leader, Fiona Pe­di­ani, is shar­ing some of her favourite recipes for de­li­cious, yet healthy meals in the Re­former over the next few weeks.

This week, it’s Bread and but­ter pud­ding.

Serves four, six SmartPoints val­ues per serv­ing.

Grease a 1.2 litre (two pint) bak­ing dish with a tiny knob of the low fat spread.

Spread 25g low fat spread be­tween four slices of white calo­rie con­trolled bread, cut each slice into four tri­an­gles. Ar­range them in the dish with 25g choco­late chips.

Finely grate the zest from one or­ange into two eggs, 450ml skimmed milk and one tsp vanilla ex­tract, beat to­gether.

Stir in 20g caster sugar, al­low­ing a few min­utes for it to dis­solve.

Pour the mix­ture over the bread, then cover and leave to soak for at least 20 min­utes.

Pre­heat the oven to Gas Mark 4/180°C/fan oven 160°C.

Peel the or­ange, then cut into seg­ments.

Un­cover the pud­ding and tuck in the or­ange seg­ments.

Bake for about 30–35 min­utes, un­til set and golden brown. Serve warm.
