We’ve got an­other fan­tas­tic recipe from Ruther­glen Weight Watcher ex­pert Fiona Pe­di­ani this week.

Peper­onata Cod is easy to make and healthy at the same time.

This recipe ser­vices four peo­ple and if you’re on a Weight Watch­ers pro­gramme, is just five smart points per serv­ing.

Pre­heat the oven to Gas Mark 5/190°C/fan oven 170°C.

Cook one sliced red onion and one diced red pep­per in a lid­ded non-stick sauce pan, us­ing calo­rie con­trolled cook­ing spray, un­til start­ing to soften.

Stir in two crushed gar­lic cloves for one minute, then add one tbsp ca­pers, two tbsp chopped pars­ley, 600g jar pas­sata, two tsp caster sugar and 50g drained black olives and bring to the boil and sea­son.

Put four x 150g skin­less cod loin fil­lets in a one litre freez­er­proof and oven­proof dish.

Pour over the tomato sauce to cover the fish and then sprin­kle with 50g bread­crumbs.

Spray the top with the cook­ing spray and bake in the oven for 20 min­utes.

Serve with 100g boiled new pota­toes per per­son.
