Healthy eating made easy with thisWeight Watchers fish recipe
We’ve got another fantastic recipe from Rutherglen Weight Watcher expert Fiona Pediani this week.
Peperonata Cod is easy to make and healthy at the same time.
This recipe services four people and if you’re on a Weight Watchers programme, is just five smart points per serving.
Preheat the oven to Gas Mark 5/190°C/fan oven 170°C.
Cook one sliced red onion and one diced red pepper in a lidded non-stick sauce pan, using calorie controlled cooking spray, until starting to soften.
Stir in two crushed garlic cloves for one minute, then add one tbsp capers, two tbsp chopped parsley, 600g jar passata, two tsp caster sugar and 50g drained black olives and bring to the boil and season.
Put four x 150g skinless cod loin fillets in a one litre freezerproof and ovenproof dish.
Pour over the tomato sauce to cover the fish and then sprinkle with 50g breadcrumbs.
Spray the top with the cooking spray and bake in the oven for 20 minutes.
Serve with 100g boiled new potatoes per person.
