Head into Clouds for taste of fu­ture cui­sine

ONE of South­port’s hid­den gems, the stu­den­trun restau­rant Clouds, is set to re­open next week.

The restau­rant based at South­port Col­lege, which opens its doors next Wed­nes­day (Oc­to­ber 3), presents a unique op­por­tu­nity for res­i­dents to get an early glimpse of the finest lo­cal culi­nary ta­lent at the restau­rant graced by some of the town’s most no­table ex­ports.

Vivi­enne Tar­leton, restau­rant man­ager at Clouds, gave a run­down of the im­pres­sive alumni that have passed through the restau­rant.

“Through the col­lege we have had Mar­cus Ware­ing and Marc Verite; more re­cently one of our chefs, Jack Bond, now works for Mar­cus.

“We have also had Johnny Howard, who works with Martin Wishart in Ed­in­burgh.”

The restau­rant will be open for lunch on Tues­days and Thurs­days, as well as themed nights to be sched­uled on a Wed­nes­day.

Vivi­enne said: “We have a va­ri­ety of dishes. For lunches we do set a price menu, and for evening meals we try to do a lit­tle bit more of a fine din­ing sort of thing.

“Last year for in­stance we did Alice In Won­der­land and King Arthur-themed nights.

“Em­ploy­ers come in and de­sign menus, and we do a lot of work with An­field.

“We just try to work with all the em­ploy­ers in the area.”

Stu­dents are in­volved in the en­tire work­ing of the restau­rant, giv­ing them a rounded ex­pe­ri­ence that opens doors in all ar­eas of the in­dus­try.

From work­ing in the kitchen to front of house, the col­lege takes a holis­tic ap­proach to the course in the first year.

Vivi­enne said: “It gives them that sort of range of em­ploy­a­bil­ity skills, then when they get to their sec­ond year they choose what they spe­cialise in.

“When they get to their third year they su­per­vise and run their own events through­out the year.”

Clouds will also be host­ing Com­edy In The Clouds on Wed­nes­day, Oc­to­ber 17 as part of the South­port Com­edy Fes­ti­val, star­ring Ge­orge Lewis and Jack Gleadow.
