225g butter 225g caster sugar 4 eggs 1tsp vanilla extract 225g self-raising flour 6tbsp apricot jam
350g marzipan 1.25kg icing sugar Food colourings and wafer daisies, to decorate
Preheat oven to 180°C/ Gas 4. Whisk the butter and sugar, add the eggs and vanilla. Fold in the flour and a pinch of salt. Spoon into 18cm square cake tin and bake for 35 mins. When cool, cut in half horizontally, spread a layer of jam on each cut side. Lay the marzipan over the bottom layer, then sandwich together. Add water to the icing sugar, add food colourings. Cut the cake into 16 and spoon over the icing. Add daisies, leave to set.
