225g but­ter 225g caster sugar 4 eggs 1tsp vanilla ex­tract 225g self-rais­ing flour 6tbsp apri­cot jam

350g marzi­pan 1.25kg ic­ing sugar Food colour­ings and wafer daisies, to dec­o­rate

Pre­heat oven to 180°C/ Gas 4. Whisk the but­ter and sugar, add the eggs and vanilla. Fold in the flour and a pinch of salt. Spoon into 18cm square cake tin and bake for 35 mins. When cool, cut in half hor­i­zon­tally, spread a layer of jam on each cut side. Lay the marzi­pan over the bot­tom layer, then sand­wich to­gether. Add wa­ter to the ic­ing sugar, add food colour­ings. Cut the cake into 16 and spoon over the ic­ing. Add daisies, leave to set.

To make mini black for­est gateaux, swap 20g flour for 25g co­coa pow­der and use cherry jam and pit­ted cher­ries in­stead
