Spiced chicken & giant couscous
TAKES 1HR 30MINS SERVES 4 Heat 2tbsp rapeseed oil in a large casserole dish, add 500g chicken fillets, skin removed, 1tbsp ground coriander, 1tbsp paprika, 1tbsp ground cumin and 1 chopped onion, fry for 10 mins to lightly brown. Heat the oven to 200°C/ Gas 6. Add 3 crushed garlic cloves, 500g cubed squash, 300g giant couscous, 300ml hot chicken stock and season. Cover and cook in the oven for 25 mins, until the squash is tender and all the liquid is absorbed. Add 150g frozen peas and cook for 5 more mins.
