Spiced chicken & gi­ant cous­cous

TAKES 1HR 30MINS SERVES 4 Heat 2tbsp rape­seed oil in a large casse­role dish, add 500g chicken fil­lets, skin re­moved, 1tbsp ground co­rian­der, 1tbsp pa­prika, 1tbsp ground cumin and 1 chopped onion, fry for 10 mins to lightly brown. Heat the oven to 200°C/ Gas 6. Add 3 crushed gar­lic cloves, 500g cubed squash, 300g gi­ant cous­cous, 300ml hot chicken stock and sea­son. Cover and cook in the oven for 25 mins, un­til the squash is ten­der and all the liq­uid is ab­sorbed. Add 150g frozen peas and cook for 5 more mins.
